What to expect
Spend three days of taste in Castelfranco Emilia!
Follow the entire Parmigiano Reggiano production chain in the dairy: from the animals to the milking room and the cheese factory, up to the maturing rooms. We will taste the cheese directly in the dairy.
You will then visit the vinegar factory and admire the barrels. Together we will taste the traditional balsamic vinegar of Modena PDO in purity. The experience includes a two-night stay at the acetaia (double room with breakfast).

Our “Acetaia” – Vinegar farm – comes from a long family tradition, jealously guarded and handed down from father to son. Passion and love for the history of our land and for the traditions of our ancestors are the feelings that have guided our family. My father has always had a great passion for the Traditional Balsamic Vinegar of Modena PDO (EU protected designation of origin).
After my first year of civil engineering at the University of Bologna, I decided to turn my father’s passion into a family activity, starting to sell this extraordinary Modenese product.
With 750 certified barrels for the maturation and aging of Traditional Balsamic Vinegar of Modena PDO, our vinegar farm is among the largest in the Modena area. All family members play an important role in this activity, always united in the common goal of guaranteeing an excellent product to our customers, preserving craftsmanship and quality.
