All about monovarietal oil

We will teach a brief course at our olive oil mill.

We will start with a lesson on olive oil and its history, on the physical, chemical and organoleptic characteristics of extra virgin olive oil, on different varieties and cultivation methods.

We will visit the oil mill to show you how we harvest, press the olives and store the oil. There, we will tell you how to read correctly the label and the costs of quality extra virgin olive oil.

At the end, we will taste three of our monovarietal oils, comparing them with a commercial one, giving you advice on how to combine each oil with food and how to use them in your recipes.


The Expert Paolo: two people and the love for a territory, that of the Canino countryside, in the heart of Tuscia. This is the beginning of the adventure that brought me, along with my life companion Ione, to put down roots in this land and then, almost inevitably, to become producers of monovarietal extra virgin olive oils.

We produce extra virgin olive oils from five different cultivars (Canino, Leccino, Pendolino, Maurino and Frantoio) and from single plots. Our olive groves are mainly located on the volcanic soil of Canino and neighbouring municipalities.

Our vision is ambitious: to enhance monovarietal extra virgin olive oils in their original territories, creating gourmet oils with a wide range of flavours and aromas. We want to enhance the essential flavours of monovarietal oils and the variability of their taste “year after year”, without trying to keep the taste “constant” with mixtures of more varieties.
