Traditional Balsamic Vinegar at lunch

Do you know about the ancient art of Traditional Balsamic Vinegar of Modena PDO? This condiment is made from cooked grape must, obtained exclusively from grapes belonging to the Lambrusco, Ancellotta, Trebbiano, Sauvignon, Sgavetta, Berzemino, Occhio di Gatta grape varieties.

To find out more about this century-old Modena tradition, we will welcome you in our vinegar farm for a guided tour among the barrels where this extraordinary product rests. With 750 certified barrels for the maturation and aging of Traditional Balsamic Vinegar of Modena PDO, our vinegar farm is among the largest in the Modena area. You will discover how each battery – that is the series of at least three barrels corresponding to the three main phases of fermentation, maturation and aging -, consists of barrels with decreasing capacity and made from different kinds of wood, which give the product different olfactory, visual and taste qualities.

We will end the experience with a tasting of our balsamic vinegars: the “Affinato” (Aged), aged between 12 and 25 years, and the “Extravecchio” (Very Old) – aged at least 25 years, paired with traditional Modena foods such as organic Parmigiano Reggiano PDO aged 24 months and organic cow ricotta PDO.

At lunch, you will taste the best Modenese dishes: homemade organic ricotta “Tortelloni” (pasta parcels stuffed with a cheese or vegetable mixture) with drops of Traditional Balsamic Vinegar of Modena PDO, pork fillet with Traditional Balsamic Vinegar, seasonal vegetables, homemade desserts, water and a glass of Lambrusco wine.

After my first year of civil engineering at the University of Bologna, I decided to turn my father’s passion into a family activity, starting to sell this extraordinary Modenese product.

With 750 certified barrels for the maturation and aging of Traditional Balsamic Vinegar of Modena PDO, our vinegar farm is among the largest in the Modena area. All family members play an important role in this activity, always united in the common goal of guaranteeing an excellent product to our customers, preserving craftsmanship and quality.
