What to expect

The fresh pasta cooking class is held in the family vinegar factory in Castelfranco Emilia. First of all, we will teach you all the steps, from kneading the dough by hand and rolling it out with a rolling pin, to making different shapes together (tortellini, tortelloni, tagliatelle, maltagliati, farfalle, etc.).

After the cooking class, we will take you on a guided tour of the barrels where our Modena Balsamic Vinegar is stored. We will taste together pure balsamic vinegars: the Affinato and the Extravecchio.

We will end the cooking class at lunchtime, tasting together the pasta we have made, a second course, drinks, dessert and espresso. You will bring home an apron or recipe book (upon availability) as a souvenir of the experience!

My father has always had a great passion for the Traditional Balsamic Vinegar of Modena PDO (EU protected designation of origin). At the vinegar factory, we also organise a fresh pasta cooking class to learn all the secrets of handmade pasta.

After my first year of civil engineering at the University of Bologna, I decided to turn my father’s passion into a family activity, starting to sell this extraordinary Modenese product.

With 750 certified barrels for the maturation and aging of Traditional Balsamic Vinegar of Modena PDO, our vinegar farm is among the largest in the Modena area. All family members play an important role in this activity, always united in the common goal of guaranteeing an excellent product to our customers, preserving craftsmanship and quality.

This experience has been the highlight of our 3 week stay in Italy. The vinegar factory owner is warm and welcoming. She showed great patience with us as inexperienced pasta makers. The meal afterwards was spectacular. We felt welcomed and enjoyed the entire experience. Her daughter was a great help in organizing this event.
