What to expect
The fresh pasta cooking class is held in the family vinegar factory in Castelfranco Emilia, where you will learn about the ancient art of making Traditional Balsamic Vinegar of Modena PDO.
First of all, it’s off to pasta school at the vinegar factory! During the course for amateur pasta makers, we will teach you how to make pasta, from kneading the dough by hand and rolling it out with a rolling pin, to making different shapes together (tortellini, tortelloni, tagliatelle, maltagliati, farfalle, etc.).
You will discover that, in Emilia Romagna, the art of fresh pasta making has a thousand-year-old tradition. There is still the figure of the sfoglina, an artisan who knows and passes on all the secrets of homemade pasta in fresh pasta courses.
After the cooking class, we will take you on a guided tour of the barrels where our Modena Balsamic Vinegar is stored. We will taste together pure balsamic vinegars: the Affinato, aged between 12 and 25 years, and the Extravecchio, aged for at least 25 years.
We will end the fresh pasta cooking class at lunchtime, tasting together the pasta we have made, a second course, drinks, dessert and espresso. You will bring home an apron as a souvenir of the experience!

With 750 certified barrels for the maturation and aging of Traditional Balsamic Vinegar of Modena PDO, our vinegar farm is among the largest in the Modena area.
