What to expect

Learn about ancient grains and how sourdough is made on our biodynamic farm in Comiso in the province of Ragusa.

You will discover that Sicily has never lost its historical relationship with wheat. So much so that Sicilian wheat was already known and appreciated by the ancient Romans, who called the island the “Granary of Italy”. You should know that the most famous Sicilian wheat varieties are Timilia or Tumminia, Russello, Majorca, Perciasacchi and Senatore Cappelli.

We will start the workshop with a walk through our vegetable garden and orchard to briefly explain how biodynamic farming is practised. I will tell you about the history and varieties of ancient wheat grown for centuries in this corner of Sicily.

We will learn how to feed and use sourdough: you will no longer have any doubts about how to make sourdough and refresh it at home!

After making pizza dough and homemade bread with sourdough, you will make pizza with biodynamic products from our Sicilian farm and take part in baking the pizza dough in the farm’s oven.

We will end the food experience on ancient Sicilian grains and sourdough by tasting all together the freshly baked pizzas.

We grow ancient grains and biodynamic vegetables, a method of farming that encourages a view of each biodynamic farm as an integrated, whole, living organism, and recommends growing vegetables in season.
