What to expect

We will start the visit at 7.30 a.m. at the cheese factory in Ospitaletto (Modena). We will explain the special features of our organic mountain milk, characterised by unique aromas and taste. You will observe the processing of milk using artisanal methods. You will follow the “birth” of an organic mountain Parmigiano Reggiano wheel right up to the salting stage.

We will then move on to the  Caseificio Sociale di Serramazzoni (10.30 a.m.) for the guided tasting of Parmigiano Reggiano, accompanied by organic honey, traditional balsamic vinegar of Modena, water and a glass of organic Lambrusco wine.

  • Vertical cheese tasting: different types of organic Parmigiano Reggiano with different ages (approximately: 17 months, 24 months, 36 months, 116 months or 126 months)
  • Horizontal cheese tasting: 2 types of Parmigiano Reggiano (Friesian cow, White Modenese Cow) in different maturities (116 or 126 months only from White Modenese Cow)

Our dairy farm has been producing Parmigiano Reggiano cheese for over 50 years and coordinates all farms involved in the production.

The organic White Modenese Cow Parmigiano Reggiano (Slow Food Presidium) is the flagship of the company. Since 2009, we have been producing just one wheel a day and it is the only one with organic certification.

Our dairy farm has been producing Parmigiano Reggiano cheese for over 50 years and coordinates all farms involved in the production: from the six farms where forage is grown and cattle are bred, to the cheese dairy where we produce our Organic Parmigiano Reggiano (it has been certified organic for over 20 years) and to the final stage of cheese packaging and sale.

Every day we produce 13 wheels of Organic Parmigiano Reggiano and 1 wheel of Organic Parmigiano Reggiano made only from White Modenese Cow milk (the Modenese White is a Slow Food Presidium): in the world, we are the sole producer of this Parmigiano Reggiano cheese.

Our farms, all family-run, are located near the villages of Pompeano and Selva of Seramazzoni in the Modenese Apennines. An uncontaminated location, between 600 and 800 meters above sea level, where respect for nature has always been very important and protection of the environment is a guarantee for healthy production.

White Modenese Cow

The White Modenese Cow is our native cattle breed in danger of extinction.

Because of its low productivity, it suffered a steep decline and, in the 1990s, it was even considered an extinct species; recently, some “Guardian Breeders” have been identified, allowing the repopulation of this precious historical species.

The White Modenese Cow produces between 9 and 12 litres of milk a day (a Friesian cow even 40 litres), but its milk has a particular beta-casein which is perfect for Parmigiano Reggiano cheese making. We will taste a kind of Parmigiano Reggiano cheese with a unique flavour and friability.
