What to expect
We will take an easy walk through the countryside, woods and olive groves and reach the oldest olive grove. After admiring the multi-coloured olive trees, we will return to our Veneto oil mill.
You will discover the organic production techniques used on the farm and visit the oil mill to learn more about extra virgin olive oil extraction and preservation techniques. We will do a guided tasting of 4 types of extra virgin olive oil. We will stimulate the sense of smell and taste to better perceive its scents and characteristics.

The Food Expert:
Our olive oil mill is a small, prestigious Veneto mill located in an old stone farmhouse that has been in the Illasi valley at the foot of the Lessini mountains since 1700. The olive grove stretches high in the hills, among native cultivars of Leccio, Grignano, Favarol, Maurino, Moraiolo and Casaliva. We produce four types of Veronese extra virgin olive oil: a monovarietal from the Grignano variety, a Veneto Valpolicella PDO, a monocultivar from the Leccino variety and a multivarietal.

We run a small but prestigious olive oil mill, located in an ancient stone farmhouse that has been present since the 1700s in the Illasi Valley, at the foot of the Lessini Mountains in the province of Verona, a valley surrounded by olive trees that alternate with vineyards and woods full of natural presences.
Among these hills, the climatic and soil conditions are particularly favourable to the cultivation of olive trees: the substratum of fossil marl and sandstone, the absence of invasive urban settlements and the closed form of the Valley, which maintains constant temperatures throughout the year, create in fact the ideal environment for the production of high-quality extra virgin olive oil.
For a farm decision, we have been growing our olive trees without using synthetic products since 2001. In this way, we take care of our olive trees respecting nature, in order to produce a well-balanced extra virgin olive oil. The olive grove extends in the high hills, among native cultivars of Leccio, Grignano, Favarol, Maurino, Moraiolo and Casaliva. Our olive trees are age-old, sumptuous and proud, with robust roots that are witnesses to the passage of centuries. A thousand trees that we have been growing one by one as if they were our daughters.
The olives are harvested by hand, cooled in a refrigerated space and then pressed within eight hours in the olive oil mill inside the farm. We produce four types of extra virgin olive oil for different dishes: white meat, red meat and vegetables, and a Veneto Valpolicella extra virgin olive oil PDO (EU protected designation of origin), all characterised by different sensations and flavours and obtained from different olive varieties. Since December 2018, we have been among the olive growers of the national Slow Food Presidium for Italian extra virgin olive oil.
