Day 1: Viterbo
Arrival in Viterbo. Meet the local guide who will take you on a discovery of Europe’s largest medieval quarter. There we will discover an ancient olive oil mill that still uses the ancient stone process!
The olive oil mill was built before the unification of Italy and houses the olive oil museum, the coconut fibre spinning and weaving museum and the World War II museum. The owner will show you the traditional “fiscolo”, a basket made from a kind of rope obtained from hemp or coconut fibres, which was used to squeeze olive oil from olives.
At the end of the visit, olive oil tasting on slices of unsalted bread from Viterbo. In the evening accommodation at a B&B in the historic centre of Viterbo. Dinner on your own and overnight stay.

Day 2: Ferento & Viterbo
At 10 a.m., meet your archaeological guide and leave by your own means for Ferento. You will visit the archaeological gem located just 8 km from Viterbo.
At 12 noon, in a well-known butcher’s shop in Viterbo, you will visit with the owner the production departments, including the ageing cell of the famous hams, from the salting phases to the peppering.
At 1 p.m., a lunch-tasting based on the ham company’s products and other delicacies from the area awaits you in the tasting room, with a first course, hot porchetta, dry cakes, water and a glass of wine. Free afternoon. In the evening, return to the B&B, dinner on your own and accommodation.

Day 3: Montefiascone
Breakfast. Transfer by own means to Montefiascone, a charming town overlooking Lake Bolsena near Rome, famous for its wine production.
You will visit the most prestigious and ancient winery in the area. Our hosts will take you on a tour of the volcanic caves, where barrels, cisterns and thousands of bottles rest, heedless of time, to taste 3 of the winery’s representative wines and discover a land linked above all to its most famous wine, Est! Est!! Est!!!.
Lunch on your own and departure for the return journey.
