The Food Expert:
The estate lies in the hills of San Miniato, an ancient medieval village in the province of Pisa, along the route of the Via Francigena. The property extends over a single hillock, 40 hectares cultivated with vineyards, olive groves and arable land. The vineyards are located about 100 metres above sea level and the varieties grown are typical of the Tuscan wine-growing tradition, including Sanforte, an almost disappeared native of which we have recovered the genetic heritage.
Cancellation policy: all bookings for the Tuscan cooking class can be cancelled within 3 days from the start date of the experience. Read the Terms and Conditions.
The winery is located on the hills of San Miniato, an ancient medieval village in the heart of Tuscany in the Province of Pisa, along the route of the Via Francigena, land of wines and white truffles (the precious Tuber Magnatum).
The estate, owned by our family since 2000, covers a single hill, 40 hectares of vineyards, olive groves and arable land. The vineyards are located about 100 metres above sea level and the grape varieties that we have been growing are typical of the Tuscan wine tradition, including the Sanforte, an almost disappeared native grape variety of which we have recovered the genetic heritage.
Our passion is biodynamics: doing agriculture following the methods of biodynamic farming means not only excluding the use of chemical and synthetic fertilisers, but also regenerating the soil and the plants through biological activators that help them find their nourishment in the soil itself.
Review
Our family (there were eight of us) had a wonderful and delicious experience. The chef took us (through the use of an interpreter and guide) through all the steps of making the dishes. Everyone had a chance to participate and thoroughly enjoyed it. The vineyard Walk and visit to the winery were very interesting. The wines were served with our dinner – delicious!
