What to expect
Have you ever been in a field of hemp sativa? Or among ancient varieties of wheat and pulses? We offer you an authentic green and food and wine educational experience, directly at an organic farm on the family’s lush green estate at the foot of Mount Massico.
Together we will discover the short agricultural chain on organic farms in Campania. You will make and taste dishes made with products from our farm.
First, we will start with a visit to the cultivated fields. I will explain the organic farming techniques practised in the farm. You will learn about the many varieties of legumes and ancient grains, the fascinating history of hemp and its many uses.
You will then take part in a cookery course directly in the organic farm. You will be involved in the preparation of dishes using our seasonal vegetables, hemp seed flours, ancient grain flours, pasta and pulses.
We will taste the dishes freshly prepared in our country house. We will toast with excellent local wines such as Falerno del Massico and Asprino di Alberata Aversana.

The Food Expert:
I am an agronomist and a “farmer-guardian of biodiversity“: I have been growing ancient and native varieties of grains, legumes and hemp (Cannabis sativa) in Carinola, Caserta. The grains that I produce in the farm are Autonomia, Senatore Cappelli, Marzellina and Gentil Rosso.
I grow some legumes that are typical of our territory such as Teano Chickpeas (Slow Food Presidium), lupins, chickling peas and tondini beans. I also grow two varieties of Cannabis sativa: the Eletta campana and the Carmagnole. I look forward to seeing you at my organic farm to enjoy these products together!

I started the organic farm because I have always felt a strong bond with my territory and the land. The activity of research, experimentation and reproduction of native varieties, as well as field cultivation, are carried out in compliance with the principles of organic agriculture, up to the short chain marketing of our products, all certified organic.
The estate, about 12 hectares, is located in the green territory of Carinola (Caserta), at the foot of Mount Massico. The pedoclimatic conditions of this territory are ideal for the growing of native varieties such as legumes, wheat, vegetables and hemp. The climate is mild, the alluvial soils and their organic characteristics make these lands particularly fertile and suitable for the growing of organic products.
Teano Chickpea
The Teano chickpea is small and hazelnut-coloured, with a thin skin and a wrinkly surface: for this characteristic, it is also called “small curly chickpea”. The Teano chickpea has an intense flavour, is savoury and less sweet than other varieties. It has always been grown for family consumption and, until the 1960s, it was a basic ingredient of rustic cuisine. It was mainly used for homemade soups, purée and tagliolini (a type of pasta), with tomato sauce and sausage made with pork from Teano black pigs.
