We have been bringing a true “olive oil culture” to the field for years, because in our mill in Molfetta we have combined the knowledge of traditional Apulian olive oil production with state-of-the-art equipment to bring our superior quality extra virgin olive oil to the table. In our estate, we take care of one of the most loved and prized cultivars, the Coratina, with a very high percentage of polyphenols.

For years we have been bringing a true “olive oil culture” to the field, because in our mill we have combined the knowledge of Apulian olive oil tradition with state-of-the-art equipment to bring our superior quality extra virgin olive oil to the table.
After the harvest, the olives are immediately pressed to avoid fermentation and to keep the acidity as low as possible.
Of course, at the milling stage, the equipment used makes a difference because it allows us to keep the temperature of the machines under control and thus also of the olives and the oil.
The olive oil produced is stored in stainless steel silos at a constant temperature and under nitrogen to preserve all its organoleptic properties.
