What to expect

We invite you to our family vinegar factory in Modena to learn about the ancient art of Traditional Balsamic Vinegar of Modena PDO.

This is a condiment obtained from cooked grape must. It is made exclusively from Lambrusco, Ancellotta, Trebbiano, Sauvignon, Sgavetta, Berzemino and Occhio di Gatta grapes. We will take you on a guided tour of the barrels where this extraordinary product rests.

With 750 barrels certified for the maturation and ageing of Traditional Balsamic Vinegar of Modena PDO, our vinegar factory in Modena is a family business with high quality production. You will discover how each battery is a series of at least three casks corresponding to the three main phases – fermentation, maturation and ageing. The battery is made up of casks with decreasing capacity and of different essences. Each barrel gives the product different olfactory, visual and taste qualities.

We will conclude the food experience at our vinegar factory in Modena with a tasting of pure balsamic vinegars: the “affinato”, aged between 12 and 25 years, and the “extravecchio”, aged for at least 25 years. You will taste the vinegar in combination with typical Modenese foods such as organic Parmigiano Reggiano PDO 24 months and organic cow’s ricotta DOP.

At lunch, you will taste the best of Modenese food and wine: homemade organic cow’s ricotta tortelloni accompanied by drops of Traditional Balsamic Vinegar of Modena PDO, pork fillet with Traditional Balsamic Vinegar, seasonal vegetables, homemade desserts, water and a glass of Lambrusco wine.

After my first year of civil engineering at the University of Bologna, I decided to turn my father’s passion into a family activity, starting to sell this extraordinary Modenese product.

With 750 certified barrels for the maturation and aging of Traditional Balsamic Vinegar of Modena PDO, our vinegar farm is among the largest in the Modena area. All family members play an important role in this activity, always united in the common goal of guaranteeing an excellent product to our customers, preserving craftsmanship and quality.
