What to expect

In Castelfranco Emilia, you will learn about the ancient art of making Traditional Balsamic Vinegar of Modena PDO. You will learn that it is a condiment made from cooked grape must. It is made exclusively from Lambrusco, Ancellotta, Trebbiano, Sauvignon, Sgavetta, Berzemino and Occhio di Gatta grapes.

We will welcome you in our family factory for a guided Modena balsamic vinegar tour among the barrels where this extraordinary product rests. With 750 barrels certified for the maturation and ageing of Traditional Balsamic Vinegar of Modena PDO, our acetaia is a family farm with high quality production.

You will discover how each battery is a series of at least three barrels corresponding to the three main phases – fermentation, maturation and ageing. The battery is made up of casks with decreasing capacity and of different essences. Each barrel gives the product different olfactory, visual and taste qualities.

You will learn to recognise authentic Traditional Balsamic Vinegar of Modena PDO. We will show you the only bottle allowed for all PDO-certified producers, designed by the famous designer Giorgetto Giugiaro. It is made of transparent glass, exclusively with a capacity of 100 ml.

We will conclude the Modena balsamic vinegar tour with a tasting of pure Modena Balsamic Vinegar: the Affinato, aged between 12 and 25 years, and the Extravecchio, aged for at least 25 years.

After my first year of civil engineering at the University of Bologna, I decided to turn my father’s passion into a family activity, starting to sell this extraordinary Modenese product.

With 750 certified barrels for the maturation and aging of Traditional Balsamic Vinegar of Modena PDO, our vinegar farm is among the largest in the Modena area. All family members play an important role in this activity, always united in the common goal of guaranteeing an excellent product to our customers, preserving craftsmanship and quality.

We 100% recommend. The owner and her family are absolutely lovely and so accommodating. We had a wonderful time visiting her beautiful farm for a personal tour. Without a doubt one of our best experiences in Italy.

The family is passionate about their business of traditional balsamic vinegar. The so-called balsamic vinegar that we’re used to is incomparable to the black gold Barbara makes. We will definitely visit again!

Great experience overall! The family was very welcoming and we learned a great deal about the making of traditional balsamic. We were the only ones for that day so it felt like a private tour! The balsamic was incredible, so fascinating to learn about how it’s made and the history of the family. It’s an easy drive (about 10 min) from the train station, would recommend calling for a cab in advance. Would definitely recommend!

We were so well hosted by the family – they are so kind and generous. The tour was fascinating and we learned a great deal, and the tasting was superb – their product really is black gold, it was divine. Completely unlike any of the so-called balsamic I’ve tried in the UK, their products are so rich and complex. As I said, the family are lovely and it felt more like visiting friends than going to visit a production facility! 100% recommend!

At the end of the tour we had the opportunity to taste various balsamic vinegars – amazing !

The tour was amazing, Helena (I might have spelled that wrong, sorry! ) was a really fun and knowledgeable guide. We got to taste several vinegars and we were able to meet the donkeys, geese and parrots at the aceteia – thank you, it was a highlight of our trip to Italy!
