Lesson in the wine cellar: Biodynamics
After a walk through the vineyards and a visit to the wine cellar, we invite you to a lesson in the wine cellar: a wine tasting to discover the colours and aromas of wine.
Food and wine pairings, guided and blind wine tastings with a Fisar or Ais sommelier, or introduction to wine making and its secrets with our oenologists – presence of the sommelier or oenologist for the lesson according to daily availability.
The Food Expert: the winery is located on the hills of San Miniato, an ancient medieval village in the heart of Tuscany in the Province of Pisa, along the route of the Via Francigena, land of wines and white truffles (the precious Tuber Magnatum). The estate, owned by our family since 2000, covers a single hill, 40 hectares of vineyards, olive groves and arable land. The vineyards are located about 100 metres above sea level and the grape varieties that we have been growing are typical of the Tuscan wine tradition, including the Sanforte, an almost disappeared native grape variety of which we have recovered the genetic heritage.
Our passion is biodynamics: doing agriculture following the methods of biodynamic farming means not only excluding the use of chemical and synthetic fertilisers, but also regenerating the soil and the plants through biological activators that help them find their nourishment in the soil itself.
