How to make cheese and ricotta

We will welcome you to our farm to show you our animals, that are native to Sicily and bred in the farm in a semi-wild state. You will take a walk in our vegetable garden and orchard, where we will explain to you how we practice biodynamic farming.

Our workshop will start with an explanation of different methods for cheese and ricotta making; then, we will put what we have learned into practice.

We will end the workshop tasting all together our freshly-made cheese and “ricotta” (a soft white unsalted Italian cheese).


The Food Expert: our farm is above all a lifestyle. A few years ago, we decided to leave our jobs to move to Pedalino, in the Comiso countryside. We have started a multi-functional closed loop farm: so we can produce everything we need for our activity within the farm itself. We grow biodynamic vegetables, a method of farming that encourages a view of each biodynamic farm as an integrated, whole, living organism, and recommends growing vegetables in season.

We are very mindful of life cycles: for each work in our vegetable garden, we follow the phases of the moon. A practice that farmers have been using for centuries in agriculture to grow genuine vegetables.
