What to expect

A day dedicated to discovering the excellence of Tuscia: villages, nature, food and wine!

We will begin the Canino olive oil experience late in the morning at our olive oil mill in the beautiful Tuscia countryside near Rome. You will participate in a short lesson on olive oil, its history, physical, chemical and organoleptic characteristics. You will learn more about Canino extra virgin olive oil, the different cultivars, their distribution in Italy and around the world, the methods of cultivation.

You will visit the olive oil mill with the Expert to learn how the olives are harvested and pressed, as well as how Canino olive oil is preserved. You will learn how to correctly read the label and the costs of a high quality extra virgin olive oil.

We will taste together three types of monovarietal olive oil from our own production, comparing them with a commercial oil and giving you advice on how best to combine and use them in the kitchen.

At the end of this short lesson and olive oil tasting (60 minutes), you will move from theory to practice! In fact, a tasty lunch awaits you at the restaurant in the historic centre of Canino, based on traditional local dishes enhanced by our extra virgin olive oil.

Two people and the love for a territory, that of the Canino countryside, in the heart of Tuscia Viterbese, a stone’s throw from Saturnia hot springs. This is the beginning of the adventure that brought me, along with my life companion, to put down roots in this land and then, almost inevitably, to become producers of monovarietal extra virgin olive oils.

We produce extra virgin olive oils from five different cultivars (Canino, Leccino, Pendolino, Maurino and Frantoio) and from single plots. Our olive groves are mainly located on the volcanic soil of Canino and neighbouring municipalities. We’ll let you discover all the benefits and taste the famous Canino olive oil together.

Our vision is ambitious: to enhance monovarietal extra virgin olive oils in their original territories, creating gourmet oils with a wide range of flavours and aromas. We want to enhance the essential flavours of monovarietal oils and the variability of their taste “year after year”, without trying to keep the taste “constant” with mixtures of more varieties.
