What to expect
We will take you on a cognitive tour of our Larderia in Colonnata, where we have been producing lard since 1930. The visit will begin in one of the workshops where we carry out the seasoning of Lardo di Colonnata PGI in Carrara marble basins, with an explanation of the various production processes.
We will then move on to our family-run premises. In the unique and extraordinary setting of the majestic white marble quarries, you will taste not only Lardo, but also seasoned Pancetta, seasoned Guanciale, Salame and Mortadella with Lardo di Colonnata lard.

Our Larderia di Colonnata was already in business in 1928, when “lard” was just the poor man’s companion for quarrymen. The research into the quality of the raw materials, the exclusive and personal ancient recipe of the right combination of spices and aromas, the care in the processing (we select and peel each P.D.O. garlic clove by hand) with constant checks and the right seasoning time (which often goes beyond the classic 6 months), make our P.G.I. lard special and unique.
