What to expect

We will take you on a guided tour of our Larderia in Colonnata, where we have been producing lard since 1930. The visit will begin in one of the workshops where we carry out the seasoning of Lardo di Colonnata PGI in Carrara marble basins, with an explanation of the various production processes.

You will thus discover that the quality of Lardo di Colonnata PGI is the result of a tradition that began more than 90 years ago, of excellent raw materials, and of the coexistence of an entirely artisanal care with the safety standards of the most modern companies.

We will then move on to our family-run restaurant, where genuineness and convenience are the essential features. In the unique and extraordinary setting of the majestic white marble quarries, you will rediscover the taste of heart-made things, of the table, of conviviality.

You will taste our tasty local specialities: in addition to Lardo, seasoned Pancetta, seasoned Guanciale, Salame and Mortadella with lard from Lardo di Colonnata.

Our Larderia in Colonnata was already in business in 1928, when “lard” was just the poor man’s companion for quarrymen. Thanks to her resourcefulness, the owner was able to make her personality shine even in an era and culture dominated by men.

The research into the high quality of the raw materials, the exclusive and personal ancient recipe of the right combination of spices and aromas, the care in the processing (we select and peel each P.D.O. garlic clove by hand) with constant checks and the right seasoning time (which often goes beyond the classic 6 months), make our lardo di Colonnata PGI of special and unique quality. We are waiting for you in the Apuan Alps to taste it at its best!
