What to expect
We will take you on a short course on monovarietal extra virgin olive oil at our mill in Canino near Rome. We will start with a lesson on extra virgin olive oil (history, physical, chemical and organoleptic characteristics). You will learn the difference between monovarietal and blended olive oil, the different cultivars.
We will visit our olive oil mill, one of the most renowned olive oil mills in Lazio. We will explain how the olives are picked and pressed and how extra virgin olive oil is stored. We will show you how to correctly read the label.
We will conclude with a guided tasting of 3 types of monovarietal olive oil from our own production. We will compare them with a commercial olive oil and give you tips on how to combine them and use them to best effect in the kitchen.

Two people and the love for a territory, that of the Canino countryside, in the heart of Tuscia Viterbese, a stone’s throw from Saturnia hot springs. This is the beginning of the adventure that brought me, along with my life companion, to put down roots in this land and then, almost inevitably, to become producers of monovarietal extra virgin olive oils.
We produce extra virgin olive oils from five different cultivars (Canino, Leccino, Pendolino, Maurino and Frantoio) and from single plots. Our olive groves are mainly located on the volcanic soil of Canino and neighbouring municipalities. We look forward to seeing you at the farm for a guided tasting of monovarietal olive oil.
