Cooking class at the “Acetaia”!

In our family vinegar farm in Castelfranco Emilia, you will learn about the ancient art of Traditional Balsamic Vinegar of Modena PDO, a type of balsamic vinegar obtained from cooked grape must and only originated from grapes belonging to the Lambrusco, Ancellotta, Trebbiano, Sauvignon, Sgavetta, Berzemino, Occhio di Gatta grape varieties.

We will welcome you in the farm for a guided tour among the barrels where this extraordinary product rests. You will discover that, with 750 certified barrels for the maturation and aging of Traditional Balsamic Vinegar of Modena PDO, our vinegar farm is among the largest in the Modena area. We will taste together our balsamic vinegars: the “Affinato” (Aged), aged between 12 and 25 years, and the “Extravecchio” (Very Old) – aged at least 25 years. You will learn how to recognise the authentic Traditional Balsamic Vinegar of Modena PDO: we will show you the only bottle allowed for all certified PDO producers, created by the famous Italian designer Giorgetto Giugiaro and made of white crystalline glass, with a capacity of 100 ml only.

After the visit, everyone at work for the pasta cooking class!

We will teach you how to make the pasta dough, from hand kneading and rolling with a rolling pin, and how to create different pasta shapes. In Emilia Romagna, the art of pasta making is in fact an ancient tradition and the “sfoglina“, an artisan who knows and hands down all the secrets of homemade pasta, still exists. We will end our experience at lunch, tasting together the pasta that we have made.

After my first year of civil engineering at the University of Bologna, I decided to turn my father’s passion into a family activity, starting to sell this extraordinary Modenese product.

With 750 certified barrels for the maturation and aging of Traditional Balsamic Vinegar of Modena PDO, our vinegar farm is among the largest in the Modena area. All family members play an important role in this activity, always united in the common goal of guaranteeing an excellent product to our customers, preserving craftsmanship and quality.
